Vegetable Soup

This vegetable soup is great on any day. It is simple, tasty and the whole family will love it. A great way to use those vegetables that are beyond their best. Once cooked and blitzed, it is a wonder delight and the taste and texture in your mouth will blow you away. I love serving soup with a doorstop slice of bread.
What ya need!
2kg of leftover chopped veg (carrot, pumpkin, onion,celery)
1 tbsp garlic granules
1 tbs dried Rosemary
2 x vegetable stock cubes
750 ml water
1 tin diced tomatoes
Your fave bread to dip
What ya do!
Throw veg into a deep pan.
Add garlic, Rosemary, stock cubes, diced tomatoes and water.
Place on the stove and bring to the boil, then simmer for 20 minutes.
Blend with a hand blender until smooth.
Serve with your bread of choice.

How easy is this dish? Not to mention healthy too!
If you have leftover vegetables use them. Don't be going to buy fresh, especially for this recipe. You can though if you want to. Don't let me stop you. If you are like me, I always have leftover veg and I just think chuck it in a pan and make it into a soup.
I love fresh garlic but sometimes I have not got the patience to be dealing with it so I opt for the dry garlic granules.
I like to get the dry herbs and spices because it is much more cost effective. On this occasion, I poured a lot more than1 tbs of herbs in. I slipped! Does it matter? No it flipping does not. It's your meal. It will taste good still and anyone that complains, use Mrs Shelley's favourite saying "oh will you stop it".
With the stock, you can buy it in the liquid format but I just had some vegetable stock cubes in my pantry so I used them. Speaking of Pantries, my pantry needs a good old sort out. It's overloaded and I have guests staying with us soon. I really cannot be bothered.
It is not just veg earrings I hold up to my ears, I also hold stock cubes. I love a good old stock cube earring.
Tinned tomatoes are worth their weight in gold when you are on a budget. They are really cheap. I love using fresh tomatoes but if I'm on a budget and want a quick meal to make, I am using tinned tomatoes.
A lot of people ask me why I take the label off my cans. We are serious recyclers in our house. Well, Mr Shelley and I are, not the kids. They reckon they don't know what to do but I reckon its a case of I cant be bothered.
When I pour water into soups sometimes it disintegrates if I get busy doing another job so I just top up with water as I go. No harm done. I need to feed everyone. Like always, present your pan to the stove. I didn't do a kick back leg on this recipe video. Mrs Shelley what a let down. I wasn't in the mood. Somebody would have annoyed me. Although I did do a kick back leg when I was using my hand blender so you can let me off on that.
I love bread so much and I got myself a nice little sourdough loaf but food is expensive. If on a budget a cheap loaf of bread will do the trick and still taste really good dipped in soup. Oooh don't forget to mop up your bowl with your bread though and hold your slices of bread to your ears for those lovely bread earrings. It smelt gorgeous, looked gorgeous and tasted gorgeous. It was so smooth and tasted rustic. I definitely curtsied massively at the end of this one.
