Cheesy pork and potato pie

What ya need!
500g pork mince
2 garlic cloves, crushed
1 tbs dried thyme leaves
250g frozen spinach, defrosted
1 x 400g tin of cannellini beans
100g grated cheese
500 ml full fat milk
knob of butter
2 heaped tbsp plain flour
500g potatoes sliced thinly
oil spray
What ya do!
Chuck ya mince in a frying pan, add garlic and Thyme
Fry till mince browned on low to medium heat, breaking up the mince as you go along.
Add defrosted spinach and cannellini beans.
Fry for few minutes on a low to medium heat ensuring mince is de-clumped.
Throw cheese, milk, butter and flower in a sauce pan.
On a low heat whisk continually till forms into a thickened consistency.
Throw the mince dish and the cheese sauce into a baking dish and combine.
Lay the potatoes on top of the mince and cheese mixture and spray with oil.
Put it in the oven on 200 degrees fan forced for 45 minutes or till the potatoes have browned.

A nice cheesy pork and potato pie. Oh will you stop it. I do not even want to think about the calories in this dish but needs must. It looked absolutely calorific.
I love using pork mince instead of beef mince at times. It does not produce a lot of fat whilst cooking. It de-clumps really well with my mince masher.
Today I am trying to use up some garlic cloves that I have, but the faff of it is painful. I'd rather buy granules or powder. I don't know why I bought them but I thought on this particular day lets do it. Yep, I won't be doing that for a while. Half the garlic stays in the garlic press. Thank goodness I used dried Thyme.
I opted for frozen spinach instead of the fresh. It is already cut into small pieces so that is cutting down my meal prep time.
With this dish I was initially going to layer up like a lasagna with potatoes instead of the lasagna sheets and cheese on top but the mood I was in I just mixed the cheese and meat together at the last minute and see what happens and it was not a mistake. It worked. This saved me heaps of time layering with two layers of potatoes. Nope, I'm not doing it.
It smelt so good but I was thinking about my waistline but pork was a healthier option with not as much fat coming out and there was spinach in it so I think I balanced it out. Although, can you see the oil on top that it produced? Oh will you stop it!
