Mrs Shelley's antics!
Hhhiiiyyyaaa
Today I am making slow cooker thick beef and rice soup. Oh dear the slow cooker is out again. That can only mean one thing. Mrs Shelley is in a grump and can't be bothered today. It can't be all bad, I still lifted the chuck casserole meat up to my ears to see what they would look like for earrings. Oh and I did the same to the onion and celery too. You don't want to know what I did with the carrot. You will have to search the video on my social medial channels to suss that one out. Oh will you stop it.
There is something wrong with my scissors today. They are not cutting good. They are a good make too. The scissors come apart for washing and I think I have not put them back the right way. Must do better Mrs Shelley.
I do click and collect for my shopping and gosh the green chilli was huge. The biggest one I have ever seen. I still used it all though. I'm just saying.
I am still not buying fresh garlic and ginger. I'm not in the mood. I'm just using dry garlic granules, ground cinnamon and ground ginger. I'm not doing it. I'm too tired. It's much cheaper doing it my way.
Mr Shelley asked me what spice I had put in this dish as it had a slight kick to it and I could not remember at the time but then I remembered I put Harissa paste in it. Why not? It is in my fridge doing nothing. Why not put it to good use. Oh my stupid Menopause brain!
Remember, I always take the paper of my tins for recycling. We are a recycling family. The wrapper for the cannellini beans and diced tomato went straight into my recycling bin. Just doing our bit.
With chicken stock, use what you have got in. If you have got a stock cube, use it. Don't be going and buying the liquid. I didn't have anything in so I just brought the cheapest brand. I'm saving for my hollibobs. When I'm feeling posh I will go for something branded but honestly the cheap brand tastes nice or I wouldn't be using it.
Not a lot of people put rice in their soup but I'm doing it. I flipping am. I am being a rebel. Don't put too much in or it will turn into a bake!
I added white beans into it. You don't have to. I had these lying in my cupboard nearly going out of date. Mrs Shelley don't like wastage. You can soak these as per packet instructions but I decided that I was not going to do that and I just threw them straight in in my slow cooker all day long and they turned out fine. If you don't have these, don't go out and buy them, miss it out.
The easiest thing about this recipe is throw it all in, give it a stir and turn the slowcooker on for 6 hours on low. I went to work so it was on for about 10 hours. I love coming home and the dinner is ready. I walk through the door and I can niff it from there. Smells awesome. I ignore everybody and head straight for the slow cooker and serve my food. You don't need bread with this as it is so thick and has rice in it for the carb portion.
A great curtsy from Mrs Shelley. I hope you enjoy it.
Love from Mrs Shelley.
