Meatball Pasta Bake

What ya need!
1 tbs of your preferred cooking oil (I use Macadamia oil)
1 onion chopped
2 garlic cloves crushed
500g meatballs (beef/pork with any herbs/spice)
1 tbsp dried thyme
140g tin tomato paste
1 400g tin of diced Tomatoes
2 chicken oxo cubes crumbled
1 cup risoni
1 packet of breadcrumb mix (optional)
210g Bocconcini sliced
Pepper for seasoning
What ya do!
Chuck ya oil in a frying pan and heat on stove on medium for one minute.
Add your onions, garlic, meatballs and Thyme and fry for 5 minutes or till meatballs browned, stirring occasionally.
Add your tomato paste, tinned tomatoes, chicken oxo cubes and one and a half cups of water and stir.
Transfer to an oven proof baking dish.
Stir in risoni pasta.
Top with breadcrumbs if using, top with sliced bocconcini and season.
Place in a preheated oven for 30 minutes on 200 degrees fan forced.
Serve.

Another pasta dish. A beautiful meatball pasta bake. I love baking my pasta. The only problem I had with this is I was tired and picked up the meatballs and did not look how much it weighed or how many balls were in it so when I got home and started cooking it up I did not know how I was going to wangle that there was enough for everyone. Like always Mrs Shelley came up with a plan. I cut the meatballs in half. I could have done it in quarters but I thought that was taking it a bit too far. It looked like there were loads of meatballs in there. Nobody questioned it. Got away with that one.
I topped this pasta bake with a herbed crumb that I had left over from Hello Fresh. You don't have to. It does not have to have a crumb. It is optional. I am trying to clear my pantry. If you have breadcrumbs use it, if not miss it out. Don't waste your money.
I sliced all them bocconcini balls up into thin slices cos what else am I going to do with them? I never have two recipes requiring Bocconcini in one week.
It was an absolute gorgeous comfort meal. We all really enjoyed it and it's just another way to combine meatballs and pasta.
