Lamb Salad

What ya Want!
800g lamb rump roast
500g mini tomatoes
1/4 cup lemon juice
1/4 cup macadamia oil (or your fave oil)
3 spring onions sliced
1 tbsp garlic powder
1 tbsp dried oregano
1/2 cucumber, sliced
200g pkt Greek style fetta, diced/crumbled
2 pitta breads, toasted and chopped
Honey for drizzling
60g bag four leaf salad
Greek yoghurt for serving
What ya Do!
Place lamb in a baking dish with tomatoes, lemon juice, oil, spring onion, garlic powder and oregano.
Mix it together, coating the lamb with the oil mixture.
Cover with tin foil and place in the oven on 180° for 1 hour fan based, coating the lamb at 30 minutes. Take the foil off for the last ten minutes to brown.
Toast pitta bread lightly in a toaster.
Add salad leaves to your individual serving plate.
Place lamb rump on top of the salad leaves.
Serve with the blistered tomatoes, cucumber, fetta cheese, chopped toasted pitta bread and Greek Yoghurt.
Drizzle a tbsp of honey on top of your salad plate and voila.

We have to have a nice little lamb salad in Summer. Oh it's so hot in Perth today. Not moaning though. Loving it!
These little mini lamb rump roasts are the cutest thing I ever did see. Combining it with a salad is genius. Use any mini tomatoes you like. It really doesn't matter.
The addition of fetta and Greek yoghurt makes it really tasty, especially with the drizzle of the honey. I am in my era of honey at the moment.. I love using the Jarrah Platinum honey TA 50+ from Forest Fresh Honey and cannot compromise on this. The quality and taste is unbelievable. I am lucky to be affiliated with them. I don't affiliate for the sake of it, only if I am honestly loving a product. I can tell the difference from the store bought honey.
