Hhhiiiyyyaaa!!!

This lamb shank pie is a beautiful dish. Sometimes you just want a pie with mash on top and today was one of them days for me. I could not be bothered with much effort so I went easy and bought a packet of precooked lamb shanks in a sauce which I have had before and it is very nice. Sometimes you have to have days like this. When you get the lamb shanks out of the box and out of the plastic wrapping, I've got to admit it looks so dodgy with fat particles but just go with it. I'm making a promise here and I don't make promises lightly. I did have a sneaky sniff to make sure it was ok and it was. Once the lamb was cooked, the meat just fell away from the bone. So good.

My vegetables were getting past their best with bendy carrots and limp celery but who cares. It's all getting baked in a sauce and will go softer anyway. Save your money and don't throw your veg away unless of course it is rancid and leaking.

For the mash you really do not have to put cheese in it. I had some leftover in the fridge that I grated and it was needing to be used so I just chucked it in. It depends what mood I am in as to whether I am going to hand mash or use my electric whizzer. Today it was the whizzer.

Once this meal was ready and placed on to the table and eaten, the whole family told me they really enjoyed it and it was so tasty. I would definitely make this again.

Hope you enjoy.
