Ham and Cheese Pizza with hidden veg

What ya need!
1 tbs of cooking oil (I use Macadamia Oil). .
1 brown onion chopped
100g Mushrooms, sliced
1/2 a zucchini, diced
100g of the cheapest whole small tomatoes you can find at the time
1 tbs of dried basil
3 tbs of pizza sauce
2 bocconcini balls sliced per pizza
1 pkt leg ham chopped roughly
4 mini pizza bases
What ya do!
Chuck ya oil in a frying pan and heat on the stove top for a minute on medium heat.
Throw your prepared veg along with the basil in the frying pan and fry for 5 minutes, or till soft, on a low to medium heat.
Stir occasionally.
Add your cooked veg and pizza sauce to a Whizzer/blitzer.
Spread the puree on your pizza bases.
Add sliced bocconcini balls and chopped ham on top of the hidden veg concoction.
Bung in the oven on 200 degrees on a pizza tray for 15 minutes or till browned.

This ham and cheese pizza was so delicious and I loved the fact that I could hide the veg that the kids won't eat. In this case, it is the zucchini.
I would love to point out that in this recipe my tomatoes were the cheapest I could find at the Supermarket. It could be any small tomatoes as it doesn't matter. You could even use any bigger tomatoes that are in your fridge needing to be use.
I love kicking my leg back at the stove to present the pan and it's contents. I am sure it tastes better. For those of you that do not know what I am talking about and are currently thinking 'what the heck', go and check out my social media sites listed at the top or bottom of my website and you will get the idea.
For oil, I always use Macadmia oil because it is more healthy, but you can use any oil you have or use, as I am aware we all have our own individual budgets.
It's great when your veg is slightly soft and past it's best as they are still useful and can still be used to blitz. My onion had two big sprouts sticking out of it!
I find it very frustrating when I go to the fridge to get something out for my recipe only to find someone else has used some of them and then I do not get the whole amount I needed/wanted. This happened with my mushrooms. I wanted more than two mushrooms but I only had two left. At the end of the day, it doesn't matter. Two mushrooms is better than none.
I am all about using dried herbs and spices because they are much cheaper and although it is nice using fresh, it is much more expensive and I find I do not require them for anything else that week and I have wasted it. No wastage is going on in Mrs Shelley's kitchen.
When blending I love my cheap hand blender from Big W. It does the job so why spend a lot?
I describe myself as a messy preparer. With this recipe I was spooning the veg into the blender and spilt some of it on the worktop. Least I have a clean worktop.
A pet hate of mine is the seals on bottles. Sometimes they are difficult to peel off. I had to tear the seal off the pizza sauce bottle with my teeth. Lucky I went to the dentist the day before and had a scale and clean.
The pizza base would make great earrings along with the bocconcini balls. I'm just saying.
I was so hungry that day that I did not wait fully for the cheese to brown but it was still melted and that is why it just looks like a boring pizza but by eck it was flipping tasty!
On a completely separate note, I really need to get a box dye on my hair. The greys are really starting to protrude!
