Chicken Topper

What ya need!
2 chicken breast fillets, cut into 2 cm pieces
1 tbs of your preferred oil
1/2 lemon, squeezed
1 tbsp garlic granules
1 tsp ground paprika
1 tsp ground cumin
1 tsp ground coriander
1 tsp cinnamon
1 tsp turmeric
salt for seasoning
1 red capsicum, sliced
What ya do!
Throw everything in an ovenproof dish.
Stir.
cover with tin foil.
Place in a preheated oven on fan forced at 200° for 30 minutes.

Hhhiiiyyyaaa!!!
A chicken topper is a surprise delight and the ideal way to clean out your fridge at the end of the week. Just chuck a teaspoon of each spice I mentioned, or whatever herbs and spices that you think will be awesome and mix it in with some diced chicken, capsicum, oil and lemon. Grab any bits of salad that is coming to the end and use it up instead of throwing it away. I had some sad leftover lettuce, cucumber and a dodgy avocado that needed using so I just topped it with my cooked chicken topper to give it a bit of flavour. I also had a bit of feta, garlic dip and hummus leftover and thought oooh shove that on and why not chuck honey on the top. Oh will you stop it I can't cope! Took a bit of a gamble but it all turned out good. Come on let's try things out, don't be scared.
I like to use chicken breast for this recipe. You can use whatever oil is in your budget, but I use Macadamia oil as I am trying to be a bit more healthier in my oil choosing.
This recipe is so easy and quick. chuck it in a bowl and shove it in the oven and voila. I even served it with some wraps too. Oooh get me living it up!
