Chicken pasta dish for dinner.  The family love carbs but when it has a nice creamy flavour, it makes them love this meal even more.

What ya need!


1 tbs of your go to cooking oil (I use Macadamia oil)

500g Chicken breast fillets, diced

Salt and pepper for seasoning

2 tbsp plain flour

1 onion, diced

1 red capsicum diced

1 tbsp garlic granules

1/2 lemon juiced

knob of butter

1 tbsp dried parsley

1 chicken stock cube

1 cup of water

Spaghetti pasta to serve


What ya do!


  • Chuck ya oil in your frying pan and heat on medium heat for 1 minute.

  • Throw ya chicken in a bowl with salt, pepper and flour and mix well.

  • Add chicken mixture to frying pan and cook for 3 minutes on a medium heat .

  • Add onion, capsicum, garlic granules, and cook for another 3 minutes on medium heat or till veg soft.

  • Add lemon, butter, parsley, stock cube and water and bring to the boil stirring then simmer for 10 minutes.

  • Serve with pasta.

Oh my gosh how I love pasta and there is nothing better than a nice flavoursome chicken pasta dish.


For this dish, I went with chicken breast over chicken thigh. I haven't had a good breast for ages. It's been the chicken thigh for a while so Mrs Shelley is living it up and going for the breast. I absolutely do not like touching chicken but I do it. I put my big girl pants on and just get on with it. You don't catch me crying about it do you? Scissors are the best for cutting meat.


When it comes to having a thicker sauce rather than runny sauce, I like to coat my meat in flour and then that acts as a thickener at the end. Remember if it is too thick, water it down. Oh will you stop it! How amazing is that? Ugh a horrible thought popped into my head. Have you ever had weavils in your flour? I have. Disgusting. Don't worry that was many years ago. No weavils in my dinner now. After that scary situation I always eyeball my flour!


I am using a fresh lemon for this recipe. Well, when I say fresh, it's getting to the end of it's best. If you do not have a fresh lemon, just use lemon juice in a bottle. Like, don't make things hard.


For my stock, I go through stages. I love the Cambell's liquid stock but I am digging right into the Oxo cube at the moment. It brings back childhood memories!


This dish was a winner with my family. There was none left . All gone. I know when they love it. They loved it and I hope you do too.
