CHICKEN AND CHORIZO DISH

What ya need!
1 tbs cooking oil (I use Macadamia oil)
500g chorizo sausage, sliced
500g chicken thigh fillets, chopped into small pieces.
1 onion, chopped
1 capsicum, deseeded and chopped
1 zuchinni diced
1 tbsp garlic granules
1 tbsp dried oregano
2 chicken stock cubes, crumbled
1 x 400g tinned tomatoes
400 ml water
Rice to serve
What ya do!
Chuck ya oil into a deep pan and heat on the stove on a medium heat for one minute.
Add chorizo sausage and chicken to the pan and cook on the stove for 5 minutes or until sealed/browned.
Add your onion, capsicum, zucchini, garlic, oregano, stock cubes, tomatoes and water to the pan and stir.
Bring to the boil and simmer for 1 hour.

I love a good multi meat dish and this chicken and chorizo dish is one of my favourites.
I love a good gimmick and Fancy Farmer sent me a bottle of Macadamia oil in a look a like beer bottle. I have now swapped my cooking oil to Macadamia oil as it is a much more healthy option for me. You, however, can use what you want. Although Macadamia oil is healthy, I understand that other oils may not be as healthy but are cheaper and it depends on your budget, which I respect.
Mr Shelley joined me in cooking this recipe today and what a hoot he was to cook with. Firstly, he presented the pan to the stove top. He so gets it from me. I am a good teacher.
He was a very silly cook today. He put the sausage links on his head and pretended it was his hair. I had to tell him off. That is not all though. He threw the sausages still linked in the pan. How is that going to cook nicely for this dish then? I gave him a side eye and cut them into bite size pieces and threw them into the pan.
We both did chicken thigh earrings. If you do not know what means, it is simply holding the chicken thighs to your ears to see what they look like as a pair of earrings. I think they look awesome. It's not just chicken thighs we tried as earrings. We tried the onion, capsicum and oxo cubes. I must say, capsicum earrings are the best.
Mr Shelley disappeared when the zucchini came out. I knew he did not want to grate that. He moans on how is wrist is aching from it. You may ask why I grate it. The kids don't like it, but I do. When I grate it, they have no flipping idea. It gets hidden in the depth of the dish. Sshhh. Mr Shelley did grate it because he dare not do otherwise but he pretended to stick it up his nose which I gave him a look of disgust. Who does that? He also pretended he grated his finger and put a piece of capsicum on top so I thought it was bleeding. I've known him too long to know what antics he gets up to. He can't fool me.
I always use dried garlic granules and other dried herbs in a jar now. I know fresh is best but I end up wasting them and the jars last longer. I'm not going back to fresh. Fresh is more expensive anyway. I like to use any money saved to go on my holibobs.
I don't know what came over me while cooking this dish because I gave Mr Shelley a kiss on the cheek and I am menopausal! Lucky Mr Shelley! Although, he is obviously not used to having a kiss as he pretended to grate my face. How rude is that? That's rude that is.
When Mr Shelley lifted up the pan, it was still hot. He burnt his fingers. What a fool! Of course I laughed! I actually nearly wee'd myself but I didn't tell him.
A tip that a follower taught me was to crumble the oxo in the silver packaging and then open the edge and pour it in your dish. I don't quite know how I got to the age of 50 and did not know this. How strange!
Always take the paper of your cans and recycle them. You are saving the environment.
Mr Shelley likes our oven gloves. They are rubber and he pretends they are a duck and pretends to peck me. I thought it would be helpful having him make dinner under my supervision but it was just hard work.
The dish was very tasty and it was very hot when I tried it. Not hot as in spicy. Hot that I should have let it cool down. I nearly burnt my tongue. I tell you what though, it made my eyes water.
