Agnolotti Pasta Dish

What ya need!
1 leek, thinly sliced
1 tbs of your fave cooking oil
1 tbs garlic granules
600g packet of Agnolotti with Spinach and Ricotta
1/2 tsp ground nutmeg
300 ml thickened cream
1 vegetable stock cube
100g grated parmesan cheese
pepper for seasoning
What ya do!
Bring a big pan of water to the boil.
Heat oil in frying pan on a medium heat for one minute.
Add leek and garlic to the pan and fry on a low to medium heat for five minutes or
till the leek has softened.
Add the Agnolotti to the boiling water and cook as per packet instructions.
Add nutmeg, cream, vegetable stock cube and parmesan cheese to leek mixture
and cook on stove on medium heat till thickened.
Drain Agnolotti and pour in the leek mixture and serve.

Ahhh the great Agnolotti Pasta Dish is absolutely awesome. A family fave in my house. Let's face it, any type of pasta is. Agnolotti is a stuffed pasta. I love a good stuffed pasta. It can be filled with anything at all. With a cheesy sauce, I always tend to go for spinach and ricotta Agnolotti. Have I told you how much I love pasta? I feel I should call myself carbie! If you love a good cheesy meal then this is the one for you.
Have you seen how big the leeks are these days? You can hardly fit them in your fridge. Oooh I hate an untidy fridge! It's not often I have leeks but I do like the flavour of it. I think it might be something to do with my husband going on about how good his ex wife's cheesy leeks were. I always reply if you love her cheesy leeks then maybe you should ask her to make them for you. Changing the subject, leeks are a great change instead of onions.
Adding cream into a dish just make my eyes widen. I love a good creamy dish. Maybe I should go for light cream, but no I never do and then I wonder why I slowly start to put weight on. I pour it in anyway and roll my eyes already knowing what this dish will do to me. I added half a cup of water into my creamy dish because I felt it was a bit thick but it depends on the amount of cheese you put in. I know I put 100g on the recipe but I think I put a lot more in as I do not tend to measure and it ended up thick. You do you, it's ok.
When you drain the pasta at the end and mix it with the leeky cheese mixture, you know good things are coming your way and that would be an absolute food coma.
Enjoy this recipe as what I did. Sometimes it's great to have cheesy carbs. That's what I tell myself and I am sticking to it. I'll make it up to myself tomorrow and have salad! Maybe.
