Pork Balls with Couscous

What ya want!


500g pork mince

3 tbs Cajun Spice blend

1 tbs Macadamia oil (or your preferred cooking oil)

1.5 cups couscous

Mini tomatoes, halved, to serve (any type)

Tzatziki to serve


What ya do!


  • Chuck ya mince in a bowl and add cajun spice blend.

  • Mix well, till combined with ya hands.

  • Add oil to frying pan and heat for one minute on stove top on low to medium.

  • Combine mince into tablespoon size balls.

  • Add to frying pan and heat on medium heat till browned all over, turning regularly.

  • Prepare couscous as per packet instructions.

  • Serve the couscous at the bottom of ya bowl and the pork balls on top, adding tomatoes and Tzatziki.

  • Enjoy.

Hhhiiiyyyaaa!!!


Ooooh pork balls with couscous for dinner. Yummy! So simple. Two ingredients to the pork balls, oh will you stop it. I promise you it still tastes good. Ideal for a quick weeknight dinner.


I used free range pork mince for this dish but you really don't have to. It was on offer so if I were you, get any pork mince on offer and save your money for ya hollibobs and exploring the world.


The worst part of making this dish is mixing the mince. I really don't like the feel of it squelching through my fingers but it's a job that needs to be done. There will be a piece of machinery available to mix it for me but am I going to use it? No, absolutely not. The less I have to wash up, the better.


When making my pork balls, I feel it is so easy to make balls by using an ice cream scoop. Yes you heard me an actual ice cream scoop. Oh will you stop it! Honestly, I scoop the mince out from the bowl with it as it gives me the exact size I like my balls to be. Don't be thinking rude things here. I am talking about the mince mixture. I then roll them in my hands and throw them in the pan. Job done. Easy.


In my family, Mr Shelley and I love couscous but the kids are not that keen on it. Who cares? They are in their teens and I'm not cooking separate meals. They have to eat it. No, I'm not mean because I do not use couscous much due to this factor but every now and again I want it. They ate it though.


The meal was absolutely simple and beautiful. Even better with a few halved tomatoes and Tzatziki whacked on the top. I highly recommend.
