Chicken and Capsicum Pasta

What ya want!
1 tbs Macadamia oil (or your fave cooking oil)
500g chicken mince
1 onion, chopped
1 tbs dried Mixed Herbs
1 tbs dried Oregano
1 tbs dried Basil
350g Pasta spirals
330g jar whole roasted peppers, chopped
500g jar pasta sauce
grated cheese to serve
What ya do!
Chuck ya oil in the frying pan and heat on stove top on medium for one minute.
Throw ya chicken mince in the pan and de-clump.
Add the onion and dried herbs, cooking on low to medium heat on stove for 3 to 5 minutes or till onion soft and mince changed colour.
Cook pasta as per packet instructions.
Add capsicum and pasta sauce to mince mixture and simmer for 20 minutes, stirring occasionally.
Drain pasta and mix together with the mince mixture.
Serve with cheese.

Ooooh this chicken and capsicum pasta dish is delightful. Come to think of it, everything with pasta is delightful for me. I am an absolute pasta babe. Pasta is my favourite and it will never change.
As you all will probably know by now, I love using Macadamia oil in my cooking. It is my healthier oil option. I do try you know.
I got a right bargain with the chicken mince. $3. Will you absolutely stop it. I hardly ever get a bargain. Ooops, when I de-clumped my chicken mince, I left the backing on. Do you ever do that? Silly Mrs Shelley. I did look for it but with chicken mince, you can't see it. It was like a thin membrane. Lucky I noticed!
I got excited using my kmart chopper to chop my onion up. It was an absolutely bargain. It's called a vegetable chopper and it chopped my onion into smaller pieces than I could ever do. I can't live without it. It has a pulley string and I like to think it is toning my bingo wings. Don't tell me it isn't or I will cry! Let me have the dream that it will.
I was upset making this dish because when it came to putting my dried herbs in, I had no Oregano. Somebody in my household had put the spice jar back in my pantry empty and it wasn't me. That would be a child surely. They are all denying it. Rude! I reckon it was little Miss Shelley. Yep, I'm blaming her.
I used two different makes of pasta spirals because I had 100g in one bag and the rest in another bag. Who cares? I just chuck it in. I'm not a chef in a restaurant. Just a mum cooking for her family so whatever happens, happens.
I added a jar of capsicums in. Honestly, when I pulled one out of the jar, it looked like a tongue. Obviously I had to prank Mr Shelley asking him why my my tongue was red and pulled on it and pretended it came out. He wasn't having any of it. Didn't believe it from the start. He knows me too well. I used my scissors to cut it up and it fell straight into the pan. Honestly, I'm not getting my chopping board out today. I don't feel like washing it.
I used a Dolmio pasta sauce in this recipe but use any. It really doesn't matter. You know what? I went in my fridge to see what other random items I had in my fridge and I chucked what was left of some baked beans in. Why not? I'm doing it.
Can I tell you a secret? I got busy and I burnt the mince mixture. It stuck to the bottom of the pan. I didn't tell Mr Shelley. I took the top part off that wasn't burnt and put it in the pasta. He won't know. It didn't taste burnt because that part wasn't. Sssshhhhh. Don't tell on me. I mixed it all up with the pasta and served it in my bowl and topped with cheese and will you just stop it! I gobbled it all up and it was flipping yummy as!
